I hate wasting leftovers.  Like, HATE it.  So what was I supposed to do with the leftover puff pastry from my Mini Puff Quiches and the leftover filling from my Sausage Ricotta Calzones.  Make Sausage Ricotta Puffs of course!

These turned out even more delicious than I could have imagined.  We just made them work as a light dinner, however they would make quite the crowd-pleasing party appetizer.  I will definitely be making these again.  Other ideas that could work are bacon instead of sausage (because, who doesn’t enjoy bacon?!?), broccoli or chopped bell pepper, plain ricotta…the possibilities are endless!

Sausage Ricotta Puff

  1. Cut puff pastry into squares and use to line a mini muffin pan to create a cup.
  2. Fill puff pastry with sausage ricotta filling.  Fold edges of puff pastry over filling.
  3. Bake at 350 degrees for 18-20 minutes.
  4. Serve and Enjoy!
