So, I’m going to be completely honest.  This recipe was intended to be more chili than soup.  But the end result was more soup that chili.  No worries, it ended up being delicious nonetheless!

This Pumpkin Chicken Chili Soup was super easy to make.  And I cheated to make it even easier, by buying pre-shredded rotisserie chicken from Costco (Shhh…Don’t tell anyone!).  I also used canned pumpkin puree instead of roasting a pumpkin and pureeing it myself – I definitely don’t have the time for that!  But shortcuts or not, this is a great one-bowl fall evening meal.  Serve with a side of cornbread or skillet bread for an even yummier treat!

  • 1 can (15-oz) pumpkin puree
  • 1 can (15-oz) diced tomatoes
  • 4 cups chicken broth
  • 2 tbsp olive oil
  • 1 lb chicken, cooked and shredded
  • 3 tbsp chili powder
  • 1 tbsp cinnamon
  • 1 tbsp nutmeg
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeno, seeds removed and diced
  • 1/2 tsp salt

  1. Heat olive oil in large skillet.  Add onions, red peppers, jalapeno and garlic and heat over medium heat.  Add  chili powder, salt, and chicken and cook until heated through.
  2. Add pumpkin puree, diced tomatoes, and chicken broth and simmer for 15-20 minutes.
  3. Garnish with sour cream, cheese, and onions as desired.  Enjoy!
