I don’t know about you, but grilled cheese is one of my favorite lazy night meals.  But, bread, cheesy, buttery filled meals aren’t always the healthiest.  So, instead of ditching the grilled cheese all together, why don’t you add some yummy greens?  The spinach and caramelized onion add amazing flavor to this loaded grilled cheese, while the avocado, and cheddar and gruyere cheeses add a creamy gooey center.

If you want a fancy, easy, filling yet somewhat healthy dinner, look no further!

  • 4 slices of whole-wheat bread
  • 1/2 cup spinach
  • 1/2 avocado, sliced
  • 4 oz. cheddar cheese, sliced
  • 4 oz. gruyere cheese, sliced
  • 1/2 onion, caramelized
  • 2 tbsp olive oil
  • 2 tbsp butter, softened

Loaded Grilled Cheese

  1. Heat a large nonstick skillet over medium heat.  Add 1 tbsp olive oil and sauté the spinach for about 2 minutes, stirring occasionally.  Set aside.  Add second tbsp of olive oil and caramelize the onions – like this.
  2. Butter one side of each slice of bread.  Add half of cheese slices to the unbuttered sides of two slices of bread.  Stack avocado, spinach and onions.  Top with remaining cheese and top with another slice of bread, buttered side out.
  3. Place sandwiches on a skilled over medium heat.  Cook for 3-4 minutes on each side or until cheese melts and the bread is golden brown.
  4. Enjoy!
