Tonight the hubby was planning on grilling steaks. And, what goes better with steaks than potatoes? I was planning on just going for my regular mashed red potatoes, but then hubby had the idea of adding garlic and bacon. Um…genius!!! I threw some extra ingredients into the bowl…and poof! Garlic-Bacon Mashed Red Potatoes were born!
This experiment turned out even better than I had ever hoped to expect. Pretty sure I could eat these with every meal. After eating these paired with roasted vegetables and the garlic butter covered steak, I was in a food coma for the rest of the night!
Prep: 30 min
1 ½ lb red potatoes, cut into cubes
2-3 garlic cloves, crushed
½ cup milk, warmed
5 strips of bacon, cooked and chopped into pieces
4 tbsp butter
Salt and pepper to taste
1. Place the potatoes into a large pot, and fill with enough water to cover. (I added some salt and dried, roasted minced garlic to the water for flavor) Bring to a boil and cook for about 10 minutes or until easily pierced with a fork.
2. Drain the potatoes and add the butter. Mash until the butter is melted. Mix in the milk and garlic until smooth (you can use an electric mixer, but I just used a spoon for a little bit chunkier texture). Stir in bacon. Add salt and pepper to taste.
3. Serve and enjoy!
