So, my favorite thing about Chipotle is their amazing cilantro lime rice. Usually, if I’m going to go there for a meal, I’ll break down and order a giant, rice filled burrito! But even if I’m trying to be “good” and get a burrito bowl or salad – I find it very hard to pass on the rice and end up including that as well.
Oh well, it’s the thought that counts, right? And a salad is good for you no matter how many carbs you load on top of it! I’m pretty sure all that lettuce negates the added cilantro lime rice calories. Plus, now that they have a brown rice option it’s totally healthy!
Every time I am at Chipotle, I think about making and enjoying that same rice at home. It can’t be that hard, right?! Turns out, it’s not! In fact, it’s really really easy! I made white rice this time, because that’s what I had in the cabinet – but you could easily sub in brown rice for a healthier version of this cilantro lime rice.
All you need is some cooked rice, I used a rice cooker, but make it however you usually make rice. Stir in some fresh lime juice, some chopped up cilantro, and enjoy! That easy!
- 2 cups water
- 1 cup white rice
- 1 tablespoon butter (optional)
- 1 tsp lime zest
- 2 tablespoons fresh squeezed lime juice
- 1/2 cup fresh cilantro, chopped
- Add water, rice, and butter to rice cooker. (or cook on stovetop if desired)
- Once rice is done, stir in lime zest, lime juice, and fresh cilantro.
- Serve and enjoy!
