The Caipirinha is Brazil’s national cocktail – and is usually made with sugar, limes, and cachaca (a Brazilian liquor made from sugar cane). This version is a Cacique Caipirinha, however, and is based on a cocktail that I enjoyed in one of my favorite vacation spots, Costa Rica. Costa Ricans use a sugar cane liquor that is called Cacique Guaro. You can also substitute white rum in for the cacique if you don’t have any of this Costa Rican liquor on hand.
- 2 Tbsp sugar
- 1 lime, cut into wedges
- 2 shots Cacique (or white rum)
- Club soda
- Muddle sugar and lime wedges in the bottom of a glass.
- Add in ice cubes. Top off with Cacique and add a splash of club soda.
