A quick, easy, healthy dinner is my number 1 priority on late work nights. By the time I get off of work I am hungry, tired, and grumpy! Super grumpy. And all I can think about is dinner, PJ’s and the sitting on the couch.
That’s why this BBQ Chicken Stuffed Sweet Potato is perfect! Just throw the chicken breasts and BBQ sauce in the slow cooker in the morning, throw a few sweet potatoes in the oven as soon as you get home from work, and in 30 minutes and about no work later, dinner is ready!
Yes people, that is right. In the time that it takes you to get home, throw you PJs on, and pour yourself a glass of wine – dinner can be ready! And not just some eh, whatever dinner ever. A healthy, nutrient rich, delicious dinner! You can always add a side salad to make this meal a little rounder, but I have found that just the BBQ chicken stuffed sweet potato makes a perfect, simple meal for me!
- 4 boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 2 sweet potatoes, cooked
- Place the chicken into crock pot and top with BBQ sauce.
- Cover with lid and cook on low for 6-8 hours or on high for 3-4. Ready when able to easily pull apart with two forks. Use forks to shred chicken breasts (you can do it right there in the crock pot)
- Make a cut in the sweet potato lengthwise. Spoon shredded chicken into sweet potato. Top with additional BBQ sauce if desired.
