Have you ever tried to grow an avocado tree?  As a kid, I would alway try.  There’s this special way to start it growing by propping up the avocado pit with toothpicks over a cup of water.  I would always get to the point where roots were growing, and then it would just go bad.  I’ve never been good with gardening.  Good thing I’m better at taking care of people than I am at taking care of green things, otherwise I’d be out of a job.  I really wish I could get a garden growing though, I would save a bundle on produce.

We ALWAYS have avocados in my house.  Always.  I eat them with everything.  On toast for breakfast, instead of mayo for chicken salad or egg salad, the classic guacamole.  But, sometimes I go overboard when I see them on sale.  And then I have a million avocados that are all ripe at the same time.  Oops!

So, I decided that I needed to do something fun and new with avocados.  And an Avocado and Tomato Salad was that perfect something new.  Its simple, beyond easy, and a fantastic side to whatever meal you choose.  It’s especially perfect right now, when the weather is getting warm, and the last thing I want to do is turn on the oven.

  • 2 ripe Hass avocados, peeled and cubed
  • 1 pint grape tomatoes, halved lengthwise
  • 3 tbsp lime juice, freshly squeezed
  • 1/4 cup pine nuts

  1. Add all ingredients to medium bowl.  Toss lightly to combine.
  2. Serve.
  3. Enjoy!

You should definitely whip up an avocado and tomato salad for dinner tonight.  Honestly, you don’t even need to make anything else.  This salad with a side of crackers is enough to make anyone happy!
