Loaded Grilled Cheese

I don’t know about you, but grilled cheese is one of my favorite lazy night meals.  But, bread, cheesy, buttery filled meals aren’t always the healthiest.  So, instead of ditching the grilled cheese all together, why don’t you add some yummy greens?  The spinach and caramelized onion add amazing flavor to this loaded grilled cheese, while the avocado, and cheddar and gruyere cheeses add a creamy gooey center. Sometimes I crave really sweet, really chocolate-y cookies.  And other times the sweet tooth is not so strong, and I want something a little more “healthy”.  I love these Oatmeal Carrot Butterscotch cookies because they are the perfect amount of sweet (which means that I can eat more of them!)
