When we were in grad school, Matt and I would go through a whole costco boxes of frozen taquitos a week. I pretty sure we had them for dinner every other night. I stopped buying them a long time ago, but taquitos are still one of my favorite “mexican” dishes. Plain taquitos are great, but when they are fancied up with salsa verde and baked instead of fried…they are so much better! (more…)
