Since Matt moved down here from Montana, I think he really misses red meat. So, once and a while I’ll make a meat dish, although I’m really more of a chicken and fish kinda girl. On our honeymoon, we bought a Cooking for Two cookbook, and I’ve been trying to explore recipes out of it. We’ve made the Szechuan Stir-Fried Steak a few times. It’s pretty quick, easy, and yummy! The dream was to go on a wonderful, fabulous, exotic vacation after graduation. Unfortunately, I had to start work right away and only got a couple of weeks off. Instead of my wonderful, fabulous, exotic vacation – which would have been more stressful than necessary due to time and money constraints – we decide to explore Los Angeles in the ways that we always said we would. Tonight the hubby was planning on grilling steaks. And, what goes better with steaks than potatoes? I was planning on just going for my regular mashed red potatoes, but then hubby had the idea of adding garlic and bacon. Um…genius!!! I threw some extra ingredients into the bowl…and poof! I have been dying to go to brunch forever now! But, my husband is not much of a breakfast person. If you gave him the choice, he would opt for a hearty/meaty lunchtime meal than a delicate scrumptious brunch.
So, I made the decision to leave him at home and bring my mom out for a nice, Saturday morning brunch on the beach. (more…)
