We’re not really big breakfast eaters. But I like to try to make something fun for breakfast at least one day a week. Usually, it’s just a simple omelet. But, if I get really ambitions I may try something special like waffles or pancakes. This weekend, I decided to make a tortilla egg pie!
I love Chilaquiles, a Mexican egg and tortilla dish, but the hubby is not such a big fan. I figured that he may enjoy the basic concept of eggs and tortillas, but with a milder flavor. This dish still has a lot of flavor, with plenty of onions, jalapeños, and cheese!

I started my new job today. And by started, I mean I sat in a conference room and listened to people talk at me about rules, regulations, benefits, ect. It was soooo boring! I don’t know about you, but grilled cheese is one of my favorite lazy night meals. But, bread, cheesy, buttery filled meals aren’t always the healthiest. So, instead of ditching the grilled cheese all together, why don’t you add some yummy greens? The spinach and caramelized onion add amazing flavor to this loaded grilled cheese, while the avocado, and cheddar and gruyere cheeses add a creamy gooey center. (more…)
